The three main pillars of flavour
These three groups of flavour are just a simplified way of categorising flavour. In reality, fig flavour is a lot more sophisticated and there are many more categories of flavour e.g. tropical, figgy, melon, peach, cherry, dates and many, many more... Which is the best? I love them all, you need variety! But if I had to choose one, Berry is my personal favourite.
The fig community categorises the three main flavour groups of figs as; Berry, Honey and Sugar.
Berry
Whether it be strawberry, raspberry, blueberry or complex berry... many of the varieties we refer to as "top tier" seem to fall in this category.
Honey
As the name suggests, honey figs are for those who have a sweet tooth. Sweetness is very pronounced in this group. This is the most popular flavour group in the Middle East.
Sugar
Plain sweet figgy, brown sugar, caramel, cookies... this is what can define a sugar fig.
